Job Specification

We are seeking a professional, well experienced and motivated individual to join our client’s team as a Food & Beverage Manager. The Food & Beverage Manager will manage all F&B operations and is responsible for delivering exceptional guest experience. The candidate will be able to forecast, plan and manage their department ensuring that guests always receive impeccable offering and service as well as managing the waitstaff to ensure the highest possible standards of service. As well as operationally strong, the ideal candidate will work closely with the Head Chef to provide bespoke menu offerings and therefore must have a naturally creative flair and eye for signature creations.

Position Requirements:

  • Proven F&B management experience. 
  • Minimum 8 Years in a 5 star Hotel environment
  • Traceable references. (Written will suffice. Contact numbers to be supplied in addition.)
  • Hospitality Degree or Diploma preferable
  • Excellent English is a necessity – both spoken and written

Financial Requirements:

  • Ensure profit centres run at stipulated COS levels
  • Manage all beverage stock within the company
  • Handle all beverage orders effectively and efficiently
  • Review all food costs with the Head Chef and supply the GM with relevant information of shortfalls etc. as well as improvement plans, if required
  • Manage F&B cost centres effectively according to our client’s property budget – daily/monthly
  • Present upcoming annual department budget forecasts
  • Manage guest experience costs as well as new experience costings
  • Manage all F&B inventory and Capex controls monthly

Operational Requirements:

  • Ensure our client’s brand standards are always maintained
  • Optimise the brand with weekly meetings with GM/HM
  • Weekly and monthly feedbacks to the GM/HM
  • Provide hygienic & thorough safety practices for staff & guests
  • Guest review audits – monthly report to GM/HM
  • Food & Beverage menu design – signature offerings
  • Strong attention to detail
  • Strong computer skills (MS Office, Excel, Micros, Opera Cloud)

F&B Marketing

  • Produce annual F&B Guest Experiences Plan and associated budget
  • Keep up to date with international guest experience trends
  • Compile and execute innovative guest experiences
  • Positive interaction with all guests is vital, establishing good rapport with return guests
  • Identify customer needs and respond proactively to all their concerns
  • Ensure the appropriate ambiance in all F&B areas is maintained at all times

Human Resources

  • Ensure all F&B staff are trained and competent to perform their duties
  • A STRONG HR background with sound disciplinary skills and a fair approach with staff
  • Provide “On the job” training programs and skills development programs
  • Maximise staff effectiveness to ensure a 100% guest satisfaction experience
  • Weekly/Monthly reporting to GM/HM on staff performance
  • Set up/manage Staff KPI`s. Report monthly on staff performance to the GM/HM
  • Lead the F&B team by attracting, recruiting, training and appraising talented personnel

Remuneration Detail
