Role Summary:
The Chef de Partie (CDP) is responsible for the efficient daily operations of an assigned kitchen section, ensuring world- class culinary standards and delivering an exceptional guest experience.
Reporting directly to the Sous Chef and Head Chef, the CDP upholds the values of Tswalu while maintaining the highest levels of food preparation, hygiene, and teamwork.
Key Responsibilities:
Kitchen Operations:
- Responsible for the day to day running of any given section
- Responsible for the cleanliness, stock control, organisation, and standards of the section
- Advising the Sous Chef on needs and ordering requirements
- Assist all team members to achieve success for our guest
- To be fully aware of all hygiene control and chemicals used
- Pass on all information to the Commis Chef and to enhance their knowledge wherever possible
- Tarkuni will be entrusted to the CDP. Hosting of guest, cooking to their needs and creating a world class intimate experience in line with Tswalu values. CDP will be responsible to relieve at Tarkuni when needed
- Assist the Manager at Tarkuni and Motse in anything they need
- Assist the Head Chef and the rest of the team to maintain quality, standards and cleanliness as required by the Head Chef
- Follow all SOP’s and recipes
- Label and date everything
- Ensure that the bulk prep is up to date
General:
- Able to work hours required and section assigned to by the Head Chef
- Take part in any training provided
- Training of Commis Chefs on the section, delegation of tasks to Commis and Demi Chefs
- Able to take control and create a positive team spirit
- To work as part of a team in a constructive manner that enables us to achieve the objective of being excellent

- Look after the Long Run initiatives
- To have a committed approach to the development of creative service in the kitchen
- To be responsible, whilst liaising with the Executive Chef for own development
- To be aware of, and comply with statutory requirements regarding the workplace such as health and safety, hygiene, fire prevention, licensing, and employment law, etc.
- To attend briefings and meetings
- Implementation of new policies and procedures
- Assists other departments when required
- Be available to serve on various committees that are required by the company and by law
- Adhere to and partake in the Long Run’s 4 C initiatives and GER standards
Qualification / Experience:
- Grade 12
- 2 – 3 years’ experience in a professional kitchen (must be able to handle up to 6 guests on their own)
- Drivers Licence
- Legislative requirements
- Comply with appropriate legislative requirements
Skills / Knowledge:
- Food preparation
- Kitchen Hygiene
- Computer literate
- Advance cooking techniques

- How to create a menu, meal planner for guest
