An exceptional opportunity exists for a highly skilled Head Chef to join our client’s dynamic team at a prestigious lunch restaurant situated in the heart of the Franschhoek Wine Route. The menu showcases a curated selection of antipasti, highlighting estate-grown produce and emphasizing partnerships with local artisans.
Ideal Candidate Profile: We seek a seasoned Head Chef with a passion for Italian-inspired cuisine, proven business acumen, and experience in an open kitchen setting. The successful candidate will be guest-focused, a strong leader capable of effectively managing and developing a small team and possess a minimum of 3-5 years’ experience in a Head Chef or Sous Chef capacity within a high-end restaurant.
Position Requirements
- Previous experience in a busy upmarket establishment (approx. 80 seats) in the position of Sous chef or Head chef
- Previous experience in working in an open kitchen will be an advantage
- Excellent culinary skills with a particular flair for Italian food
- High focus on customer satisfaction
- Impeccable health and hygiene standards
- Excellent supplier relationships
- A natural leader with the ability to motivate and discipline a small team
- A person with an impeccable sense of responsibility
Key Responsibilities
- Creates the menus for all entities’ food offering keeping with the specified style of Cuisine per entity
- Ensures all dishes are correctly costed and presents these costings according to agreed deadlines
- Ensures that all kitchen staff members are thoroughly trained on the execution of the menu
- Creates customized menus for all Estate functions & events
- Ensure staff are trained in preparation and serving of food offering
- Managing food costs and expenses within budget
- Manages the process of all food stock ordering
- Conducts an accurate monthly stock count on the last day of every month

Candidates, who are already residing in Winelands Region will have preference. We can only consider South African Citizens or applicants who hold a valid South African Permanent Residence! No Work Permit applications will be accepted! Applicants, who live in other provinces of South Africa still need to attend personal interviews and if requested to do any cook-offs, will do so completely at their own expense.
