Our client, a high-end 150-seater restaurant, in the heart of Cape Town, specialises in Cape Malay cuisine. We are looking for an experienced and dynamic HEAD CHEF to spearhead the overall kitchen operations of this high-end start-up restaurant. 

The ideal candidate is familiar with Cape Malay cooking and spices, previous experience in a high-end start-up restaurant beneficial, demonstrates exceptional culinary, organisation and interpersonal skills.  Experienced in guest interaction, setting up policies and procedures, SOP’s, BOH systems and procedures, and Health and Safety protocols essential. We are looking for a true leader, stable and able to perform under pressure.

Position Requirements

  • Qualification in Professional Cookery or relevant culinary qualification 
  • At least 8 year’s proven working experience as a Head Chef in a high-end restaurant environment 
  • Excellent knowledge of kitchen management 
  • Experience in menu engineering, and recipe costing and management
  • Proficient knowledge of Cape Malay Cooking
  • Strong ability to manage BOH systems, orders, inventory and cleaning and hygiene cycles
  • Stable and strong ability to manage pressure
  • Excellent verbal and written communication skills
  • Passionate about cooking and continued staff development  

Examples of Key Responsibilities

  • Menu engineering, costing, recipe design and testing, kitchen budget management
  • Strong financial and administrative competence to drive through commercial efficiencies, kitchen budgets and to ensure profitability 
  • Strict stock controls and management, stock movement, rotation, ordering, supplier liaison and price negotiations 
  • Excellent control of food cost, wastage and kitchen preparation
  • Ongoing staff training and development and staff recruitment 
  • Ensuring the team has high standards of food hygiene and follow the rules of health and safety

Candidates, who are already residing in the Western Cape will have preference. We can only consider South African Citizens or applicants who hold a valid South African Permanent Residence!
