Overview

We have an exceptional opportunity for a seasoned F&B / OPERATIONS MANAGER to join the pre-opening team of a high-end Farm-to-table-style Restaurant, strategically located in Durbanville. The restaurant will provide mainly lunch and dinner dining experiences in a refined yet inviting and relaxed ambiance.

We seek an experienced HOSPITALITY / FOOD AND BEVERAGE MANAGER with an unwavering passion for hospitality and service excellence. The job purpose is to coordinate daily Front of House Restaurant and Wine Tasting operations. 

The ideal candidate exhibits a strong financial and business acumen, previous experience in the set-up and management of a new establishment beneficial, exceptional organizational, and interpersonal abilities, possesses strong leadership qualities and excels in high-pressure environments. 

Minimum Requirements and Key Responsibilities

Qualification in Hospitality / F&B Management · at least 4-6 years’ experience in a F&B Management role at high-end establishments · service driven · proficient knowledge of financial & budget management, marketing strategies, inventory management, staff development and performance management, administration · previous experience in a start-up restaurant beneficial

Key Responsibilities

Operations:

  • Coordinate daily front of house restaurant and wine tasting operations 
  • Deliver superior service and maximize guest’s satisfaction 
  • Respond effectively to guests complains
  • Organize rosters and supervise shifts
  • Ensure compliance with sanitation and safety regulations 
  • Responsible for stock flow and budgeting 
  • Engaged with the guests and responding to their needs as required 
  • Trainings of staff on new ideas and items
  • Manage all staff related issues, performance management,  disciplinary issues and grievances ect
  • Come up with innovative ideas to promote and advertise the restaurant and tasting room
  • Manage a close relationship with the Owners and back of house staff
  • Overseeing efficient cash-ups and managing budget with the finance department 
  • Administrative duties including record keeping, processing emails and meeting with suppliers 

Management and Administration:

  • Ensure that all SOP systems and other standards of the restaurant is consistently met
  • Ensure that all legal requirements are consistently met
  • Develop and implement policies and procedures for the food and beverage department 
  • Address complains from the guest to the CEO on appropriate corrective actions taken
  • Approve all invoices before submitting to accounts department 
  • Ensure that an accurate reservation system is in place
  • Consistent staff training regarding handling procedures insure minimal crockery breakages 
  • Greet guests and oversee actual service  on a routine basis
  • Develop an operating budget for each of the departments 
  • Ensure management of food cost are in budgetary targets
  • Manage operational costs and budgets
  • Analytical thinking and problem solving
  • Develop and train staff to become effective users of the POS to generate efficiencies and drive control procedures 
  • Responsible for the proper accounting and reconciliation of the POS revenues 

Inventory Management:

  • Design and implement procedures regarding  inventory stock counts
  • Conduct stock variance and compile a monthly report
  • Implement corrective action to reduce stock variance and wastage
  • Build and maintain relationships with suppliers negotiating prices  and quality 

Marketing:

  • Liaise with the Marketing agency to promote, advertise the restaurant and tasting centre
  • Assist with planning and approving external and internal marketing 
  • Develop ways of promoting functions for the restaurant
